Umm, if you went Venator you could get access to Goliath weapons which might nicely represent the pit slave rock saw?

Although I think you could use either (and get broader access to Goliath weapons with Outcasts if that's what you wanted), I'll second that Venators would probably work better. Mostly because they get variable profiles on every fighter- you'll be able to specialise each of them to suit their weapons/implants rather than the Outcast method of "everyone but the leader and champions are identical Hive Scum".
You could also consider a Cawdor affilated gang of either kind as they also have some interesting melee weapons: the old cutting claw could be a good counts-as Greatsword (Sever seems to fit here!), or a flame nozzle could turn a buzz saw into an eviscerator.

In any case, if you're set on just using the old models then it won't be an easy gang to use due to the lack of any ranged weapons outside of pistols. Very possibly something you were already aware of though.

Old models had a plasma gunner techno and shotgun on the boss mind. So not terrible ranged weapons.

I assume you'd be converting some as otherwise you run out of options after 6 or so

House of Chains gene-smithing allows for Unborn fighters. Discounted fighters who are not Goliaths, but are otherwise a Goliath gang. I don't see a rule that prohibits the entire gang being Unborn. Never thought of it before, but that could work for Pit Slaves.
