Make a model inspired by music - it could be the physical embodiment of some lyrics, the band itself touring grungy underhive bars, or a lone minstrel trying to convince a party that "combat flute" is a valid and useful skill set to take dungeon crawling.

Make something for any of our usual games (Necromunda, Mordheim, etc) that's either smaller or larger than usual for what it is.

Build and paint something inspired by a work of fiction. A figure inspired by a fictional character, some terrain inspired by a fictional world or place, a diorama inspired by your favourite fictional moment, the whole of literature and cinema is at your finger tips.
As the old hive saying goes, there are no ugly women if you have enough of the Second Best....or particulary ugly person.
(Can be applied to women too.)
Space Trolls!
Most fantasy races got carried over... except the venerable Troll! Make a Space Troll suitable for the sci-fi setting...
Space giants and space dragons would be cool too, but it kind of feels natural that the big classical monsters got left out. But giants, dragons and bears are the things I really wished were included some how.Space Trolls!

But I agree that fantasy trolls feel like they should be there but aren't. Perhaps justified as a complex form of squig since 40k tries to give a quasi-realistic justification for stuff.
